Since 1983, Pappardella has graced the corner of Columbus and 75th, making it the near-perfect stop after a day of Central Park adventures, museum visits, or Upper West Side activities. They now celebrate their 40th anniversary.

Marion Maur, a name well-known and loved in the community, is at the heart of Pappardella and has managed the restaurant for 15 years. Raised in a small town in Germany, Marion entered the Swiss hotel business in the early ’90s. She soon fell in love with New York City, and made her way into the restaurant scene, taking on numerous impressive roles within New York and Miami.

Her work ethic and passion for the business proved unrivaled. After not being rewarded for her efforts as due, she embarked on her own journey to Woodstock, a town in stark contrast to her previous big city experiences.

With only brief cooking experience from her European upbringing and some unwavering self-belief, Marion opened Marion’s Country Kitchen as the chef and owner. She unconventionally created an incredible menu, focusing on local and sustainable products, and an even more impressive atmosphere. Marion’s Country Kitchen soon became one of the top destinations in Hudson Valley, drawing regulars and those seeking a sense of community, fun, and the touch of city Marion brought upstate.

After five years, Marion decided it was time to bring her newfound wisdom back to the city. Rather than starting another restaurant, she joined Pappardella as a manager to balance her life with family. A new family quickly formed within and around the Pappardella walls, as Marion naturally embedded her nurturing nature and wealth of experiences into this new project.

Since then, she has curated such a strong community that during the depths of the COVID-19 pandemic, which devastated New York City, Pappardella transformed into a lifeline. It acted as a supermarket, offering necessities, often for free, through their large windows. This act of kindness naturally strengthened the neighborhood’s sense of family with Pappardella, and many still remember the hope that Pappardella brought during those dark days.
